Pecan, Honey & Caramel Slice


My mum was not well this week & had to have a small op so I wanted to cheer her up, so as well as taking her a lovely drought tolerant plant for the garden (instead of flowers which just die) & a box of Ferrero Rochers (Michael bought back 3 mega boxes from NZ which I did not want to consume all by myself) a home baked treat was also in order, she loves a pecan pie so I thought this recipe sounded right up her alley. This is a Belinda Jeffrey recipe from Delicious Magazine and believe me its very good & dead easy to make as well.

Pecan, Honey & Caramel Slice

2 cups plain flour
½ firmly packed cup (100g) brown sugar
180g chilled unsalted butter, chopped

Pecan topping
125g unsalted butter
1 cup firmly packed (200g) brown sugar
1/3 cup honey
1 ½ tablespoons pure (thin) cream
250g pecans, sliced lengthways
1 ½ teaspoons vanilla extract

Preheat the oven to 180c. Grease and line a 4cm deep, 21 x 30cm slice pan with baking paper, allowing the paper to extend slightly over the edges of the longer sides. Whiz the flour, sugar & ½ teaspoon salt in a food processor for 15 seconds. Add butter and whiz until mixture resembles damp sand. Tip into pan & pat out evenly over the base. Bake for 20 minutes or until golden.

Towards the end of baking time, make the topping. Melt the butter in a heavy based pan over medium heat. Add sugar, honey, cream & ¼ teaspoon salt & stir for 2 minutes or until sugar dissolves. Bring to the boil then reduce heat to medium low & stir for a further minute. Stir in the pecans & vanilla, then remove from the heat & keep warm.

Remove base from oven & stand for 1-2 minutes, then spread warm pecan mix evenly over the top. Bake for 16-18 minutes or until topping is bubbling & deep golden. Place the pan on a rack & cool completely. Once cool, slice & store in an airtight container for up to 5 days in a cool spot.

Ricotta Hotcakes with Honeycomb Butter


Over Easter I whipped up another fantabulous breakfast from Bill Granger’s Sydney Food to snack on over the break. More on the pancake theme which I have to say is my favourite breakfast item at the moment & the honeycomb butter is truly special.

Ricotta Hotcakes with Honeycomb Butter

1 1/3 cups ricotta
¾ cup milk
4 eggs, separated
1 cup plain flour
1 teaspoon baking powder
a pinch of salt
50g butter

To serve
Banana
Honeycomb butter (below)
Icing sugar for dusting

Place ricotta, milk & egg yolks in a mixing bowl and mix to combine.

Sift the flour, baking powder & salt into a bowl. Add to the ricotta mixture & mix until just combined.

Place egg whites in a dry clean bowl & beat until stiff peaks form. Fold egg whites through batter in two batches, with a large metal spoon.

Lightly grease a large non-stick frying pan with a small portion of the butter and drop two tablespoons of batter per hotcake into the pan. Cook over low to medium heat for 2 minutes, or until hotcakes have golden undersides. Turn hotcakes and cook on the other side until golden & cooked through. Transfer to a plate & quickly assemble with other ingredients.

Slice one banana lengthways onto a plate, stack 3 hotcakes on top with a slice of honeycomb butter. Dust with icing sugar. Serves 6-8.

Note: Batter can be stored for 24 hours in the fridge covered with glad wrap before cooking.

Honeycomb butter

250g unsalted butter, softened
100g sugar honeycomb, crushed with a rolling pin
2 tablespoons honey

Place all ingredients in a food processor & blend until smooth. Shape into a log on plastic wrap, roll, seal & chill in fridge for 2 hours. Store leftovers in the freezer, apparently its great on toast too!

Ginger & Ricotta Flatcakes with Honeycomb


Yesterday I had my family over for brunch before heading out to the Melbourne International Flower & Garden Show with my mum. I cooked up these flatcakes which sounded yummy, they took a bit more effort than just your average pancake so needed an excuse to cook them, would not go to the effort for just Michael & I. The reason I picked these was that I had a lovely chunk of fresh honeycomb that I picked up a couple of weeks ago. The end result was very nice, the coconut gave them some added flavour as well as a nice texture, I couldn’t really taste the ginger though so would maybe increase the quantity next time. The family were impressed & at 3 per person they were actually very filling so even though the recipe was for 4, I fed 5 without any empty stomachs left at the end. Ginger & Ricotta Flatcakes with Honeycomb

150 g (1 cup) Wholemeal Flour
2 tablespoons caster sugar
2 teaspoons baking powder
55g (1 cup) flaked coconut, toasted
2 teaspoons ground ginger
4 eggs, separated
310ml (1 ¼ cups) milk
500g ricotta
200g fresh honeycomb, broken up into chunks
4 bananas, sliced

Sift flour, sugar, baking powder & ginger into a bowl & stir through coconut. Make a well in the center & add combined egg yolks, milk & 350g of ricotta. Stir until a smooth batter forms. Beat egg whites until soft peaks form, fold through mixture.

Drop 3 tablespoons of batter into a lightly oiled or buttered pan & cook until small bubbles appear on top, flip & cook other side. Serve 3 flatcakes topped with a spoonful of ricotta, a chunk of honeycomb & sliced fresh bananas. We also poured over some maple syrup & some of us even added a scoop of ice cream!
